My favorite thing to do in the summer is (aside from playing corn hole) is sundowners. When you have sundowners, you sit with friends, drink something cool and refreshing and you reflect on life while watching the sun set. My family does it every Sunday, and if I can squish one in mid-week with more friends, all the better. Here’s a delicious whiskey and lemonade cocktail that is perfect for sipping on a warm summer’s eve.
California Dreaming
Joe and I are moving to Santa Barbara on July 8. Apparently this is the year for travel. He has a book project he’ll be working on (which will also take him to Cyprus, Syria, Jordan and Israel), I have markets to explore and Marston has a beach he needs to play in. It’s a temporary move, but one we are both looking forward to.
In light of our impending California adventure we’ve been trying to soak up as much time as possible with friends. (One of the downsides of spending time in different cities is the lack of community). When friends came over the other night, we were eating pulled pork with pickled onions and slaw. Since it was barbecue I knew I wanted to do something with whiskey.
I googled a bunch of different recipes and wasn’t crazy about anything I found, so instead, I took a little of this, and a little of that and a little of what my mom taught me and came up with this whiskey and lemonade drink that I call a Summer Solstice!
*This drink can easily be made for one or two people it’s a ratio of 3 parts lemonade, 2 parts tonic, 1 part whiskey.
- 1 carton of Simply Lemonade
- 2- 2.5 cups of whiskey
- 1 quart of tonic water
- 1 lemon
- 20 mint leaves (or enough that the color distribution looks right)
- Combine all ingredients, pour over ice.
- ENJOY.

Eat with: Smoked Pulled Pork (sorry I’m not sorry that I can’t get enough of this pulled pork).
